SUGAR DETOX IS OVER!!!!
I really want to know how every did? Honestly I had good moments and I had weak moments. It was my birthday and a few friends birthdays and then I had an incident with my baby that landed us in the hospital so I may have had some sugar to ease my pain :) (I sound like an addict....well I kind of am). With that being said I honestly realistically had at least 15 days where I truly avoided the items I listed and I felt empowered! It felt so good to know I had control of my body. It also felt good to not go to bed sick from sugar coma (true fact especially on weekends). Now I need to do a Diet Cherry Pepsi and Diet Dr. Pepper Detox :) But it may have to wait until my cute baby isn't waking up every 3-4 hours. (I know it's time to let him cry it out!)
Because it's Monday Meals I decided to do one of my go-to dinners and healthified cookies. I am all about substitutions when it comes to cooking! In these cookies below you use chickpeas/ garbanzo beans so not only will they be lower in fat but they will have added protein. (you will notice in the picture below some of the cookies don't have chocolate chips...I am still dairy free and peanut free right now because of my babe so I made some I could eat)
Chocolate Chip cookies with chickpeas
Ingredients:
1 can (1 1/2 cups) Chick Peas, drained
1/2 cup Almond butter
1/2 cup Light Brown Sugar
2 teaspoon vanilla
1/2 tsp cinnamon
1/8 tsp Salt
1/8 tsp Baking Powder
1/2 cup Chocolate Chips (dark provides more antioxidants)
Directions:
- Preheat oven to 350.
- Combine all ingredients, except chocolate chips, in a blender, food processor, or bowl with hand mixer.
- Blend until chickpeas are smooth
- Add chocolate chips and stir.
- Scoop 1 inch thick balls onto a sprayed or greased cookie sheet.
- Bake for 15-20 minutes, or until chocolate chips are melting.
- Remove from oven and let cool.
Crockpot Balsamic Chicken and vegetables
This is one of my go-to dishes because it is pretty easy and yummy and in my life the simpler the better
Ingredients:
6 chicken breasts, cut into strips
1 onion, sliced
1 green pepper, sliced
1 zucchini, sliced
2 tomatoes, quartered (or 1 cup of grape tomatoes)
(and you can add whatever other veggies you like)
1/4 cup balsamic vinegar
6 cloves garlic, minced
2 teaspoons ground oregano
1 teaspoon basil
1/2 teaspoon black pepper
Place vegetables in slow cooker, then place chicken strips on top. Sprinkle garlic and spices over chicken, then pour balsamic vinegar over chicken. Cook 3-4 hours on high (or 6-7 on low). About half way through mix chicken with the veggies and juice that is in crockpot and return to cooking until done. This meal can be served on top of couscous or brown rice. Enjoy!!!

I hate to admit it but the weekends killed me! I feel like I was really good all week though:-) I would say I had a awesome 15 days where I felt I was in control! It was so worth it I think I may give it another try and maybe I can do a little better:-)
ReplyDeleteWay to go on 15 days!! The no sugar thing is so much easier said than done. Especially since I am a total emotional eater. When I get nervous or stressed...I eat crap! Such a bad habit that I am trying to get on top of!!!
DeleteSounds like me, Mon-Fri I was really disciplined, then totally botched the following 48 hrs. I plan on doing it again after Easter; hopefully I'll do better then. And, I'm also relieved to hear I'm not the only emotional/hormonal/stress eater out there!
